My wife finally tabulated our 13 day trip to Italy Monday Nov 24 to Sunday Dec 7 for a family of 5.
Flights: CC points
`$7500 ($6800 total plus I'm estimating about $700 in CC point usage-photographer, last hotel night, etc.)
4 nights Rome
3 nights Cinque Terre
2 nights Florence
2 nights tuscany
1 night FCO airport hotel
We stayed in apartments every night and it looks like we avg $213/ night. We actually "splurged" and got a couple with views/ balconies where we could have went cheaper. We also went with good locations. So while inexpensive, it was by no means super budget friendly.
We basically carry on going over, so 3 of them were on the 4th or 5th floor without an elevator so that helps as they are generally cheaper. I mention carry on because lugging carry ons up 4-5 stairs is one thing, but 40lb suitcases would have sucked.
We had 3-4 meals over $250. I can think of 3, I'm sure there was a 4th. Multiple meals over $125. But outside of that we did eat a decent amount in the apt. I bought $70 of steak for thanksgiving from a butcher, I was actually shocked at the price being low. We don't ball out but also don't eat beans and rice.
That also include a soccer game. But youth tickets were $20, so all in our tickets were under $300 for the 5 of us.
Nothing cheap, but you can do it for a reasonable amount. $4000/ week for a family of 5 before airfare I don't consider outrageous.

Years ago, we took an Italy trip through Delta Airlines. Flew into Rome, train to Florence, then train to Venice, then train to Milan and departed back to the States from there. Accommodations were all part of the package. Check with Delta, as I’m sure there’s overall price will be better if you book it all with them or something similar.

July is the worst month to travel to Italy — then August, June, and early September.
Generally speaking, I would choose to go in October or April (though certainly not Easter week)

The summer is generally peak time June and July. Flights from the USA are generally going to be expensive when Americans want to fly.
A lot of Europeans take significant time off in August so things can close down. I think mostly this started because it was so hot that working was not worth it and they all went to the beach.

I get that I was raised by depression era grandparents, and had frugal parents, but WTF. My per diem (meals only) in Rome was under $50 six years ago, and I made money. I couldn't spend that amount of money (minus hotel) even when I had the ex wife and 2 kids with me.)

I am assuming that this figure includes hotel, and there are lots of hotels that are more than this just on their own.

Depends on what you want to do.
Excluding flights and including hotels, you can expect to spend 500-1000 a day depending on where you stay, what you eat, and what you do.
10 days, you are looking at between ~5,000-10,000
Flights for two people, ~2,000-~2,500 for economy total

Crap! Totally forgot I posted this, but we were able to move some things around and get our trip scheduled in May, much better than late June into July so I am glad about that.
Realized we had enough CC points to cover our flights round trip so that saved us some cash!
We are officially headed there May 11-24th! Now it’s time to start booking rooms/events

How soon in advance did you book those hotels? If the hotels cost about $3000(were those prices per night or for the stay?) what bumped you up to 15k?

3K on tours? JFC. Do you not understand how Tripadvisor or Viator work? That is an obscene amount of money for Italy. $2k on food? Are you taking IG shots, or are you eating where locals eat?

Not really. You don't have to pay that, but its not that crazy.
Here's some examples, you can pay $200-500/ person for something like a small group private tour of the Vatican.
To do a private company guided tour of the coliseum in Rome is anywhere from $85-250 depending on the options but the most common was over $150. For my family of 5 it was going to be over $650 in early December, off peak time. We did a basic tour through the official Coliseum staff and it was I think $30 each. But those tickets sell out quickly.
A gondola in Venice, shite its probably like $300 for 30 mins? I dont' know.
Rome and a lot of the bigger cities have a lot of "tours" that most places don't. I rarely pay for private tours, but if your time is limited like you are there for a cruise and only have 2 days in Rome than a private tour or two can be extremely valuable.
