But it's also worth noting the MCAT is but one of many entrance criterion.

That's excellent. Sans an awful set of interviews, zero extracurriculars, etc. he sounds like he should have been a slam dunk.
In residency matching, sometimes "overqualification" leads to the assumption the candidate will get better offers elsewhere, so they are not selected. But Med School entrance doesn't really work that way.
Programs may also limit the number of acceptances from one school. But with that MCAT/GPA/Major one would assume he'd fall well into acceptance range, regardless of those limitations.
Surely he floated a number of applications.
Where else was he accepted?

Grandson is majoring in biochemistry,minor in physics.Has aspirations of going to medical school.Wife is NP and,Drs at her clinic basically have told him his chances as a white male are little to none.He hasn’t graduated yet,is going to take MCAT soon,he’s doing extra curriculars,shadowing a Dr.
Guess we’ll see if he gets in.

Nah, it isn't unheard of for a school with 100 slots to interview 400 kids. I know of one school which has around 70 slots per year and interviews around 200 kids. Again, it is very competitive for top applicants year to year.

Must have changed then, because back in my day, I was told my interview and most from LSU were more formalities.

Apply early as possible. As soon as class is full, they are done.
Make sure you have everything needed for application, if something is missing, you get moved aside and the application process is paused. The people initially screening the applications are the office staff at med school, they go through list and make sure all criteria has been met, putting them in a pile. People do get lost in the process, but as you said, they aren’t wasting their time interviewing if they have filled the class, especially the state schools. Rarely do they have accepted applicants back out and need the fill spot.

Serious question: Do you have any family members who are physicians or Dentists who went to LSU Med/Dental?
A certain amount of politics/ nepotism is existential especially for the Med School in NOLA....despite protestations otherwise.

According to AAMC...the medical school in NOLA got 3891 applications, interviewed 533 and took 195 students in the last class.
Med school in Shreveport got over 4000 applications and interviewed 312 for 150 spots.

Bottom line is they have plenty of qualified applicants and fill every class.
Tulane had over 15k applicants and took @200. They are more likely to lose applicants to state schools last minute because of the tuition difference and people getting in a med school closer to home.

Racial bias in med school acceptance pre-dates DEI.
Not saying it’s right.
Racial bias in scholarships is decades old. It was around when I was looking for scholarships in the 80s.
