You know “all time” covers a lot of ground.

If you live in a rural area go to a farmer who has cows and he’ll probably hook you up with a steer or point you in the right direction.Quite a few around me including my neighbor are selling them.

Don't buy it. Find a rancher or a local slaughterhouse and buy from them.
The ranchers are getting an extremely low price and the packers are jacking it up

That is fricked.

They're taking advantage of a stressed situation just to make more money.

Zack, if you first coat that steak completely in kosher salt, put it in the fridge for an hour, then take out, wash the salt off and pat dry, it breaks down the fibers.

Then, season it with pepper and sous vide that sirloin for 5 hours at 134. Take it out, pat dry. Dredge in butter that's been simmering at low temp with a few cloves of crushed garlic and a sprig of rosemary and drop onto a hot cast iron skillet for two minutes. Drizzle some butter on the steak and flip. 2 more minutes and you're done.

It'll be medium rare and as tender as a prime cut of rib eye.

Thank you. I bookmarked this.

All the local farms I see are still more expensive than the jacked up Sams prices

The 73% was 4.38/lb

Luckily i found some 93% that was 4.27/lb.

4.5 lb of memorial day burgers.

So you're eating dry burgers to save .50?

Haha no shite..

Here’s what you do with the 93% to make good burgers. Buy a package of bacon, trim off all the fat strips, mix that into the meat. When the hamburger cooks, the bacon fat will integrate.

Wait, frick. Bacons $6

I tried something very similar to that months ago. It doesn't work with today's sirloin. It's crap. I can do it with NY strip if I can get it.

That’s business. Beef suppliers are doing their job beating up their vendors.

This is why I hunt Elk and eat saltwater fish. But we all talked about beef hitting a water crest around June/July then coming back down.

I was in Sams this morning picking up a few items.

Our Sams had Gloves, Masks, and Clorox Wipes right as you come through the entryway. Hand Sanatizer was available in the normal spot by the hand Soap. They only had 8oz bottles, limit one per customer.

Toilet Paper & Paper Towels were in ample supply.

In the meat section, they were low on everything, but had quite a few different selections for steak. I picked up a couple of 4 packs of Fliets for about $50 a pack. Got some pretty Ribeyes and a couple of NY Strips.

Ground beef was low, but the price for 1lb of Organic 85/25 was around $4.80 a lb. The 80/20 was a little less than that.

They had chicken and pork as well, Mostly chicken breasts and pork chops. No chicken legs.

Stopped at the store earlier, meat section was pretty full. All the beef was higher, ground sirloin was 8.99 a pound. They did have some cube steak on the last sell by day that was marked down, so I grabbed that. Guess I'll start eating more chicken and pork.

I'm sure if Tyson is throwing away $40,000 of meat every day because they can't process it that prices paid to farmers for meat will be extremely low.
