I usually bump this thread before football season every year, but it is locked and Admins won't unlock it. So here's another thread.
Ingredients:
2lbs of Jimmy Dean Breakfast Sausage
5 large fresh jalapenos
Cream cheese of your choice
20-25 strips of your choice of bacon
Sweet BBQ sauce
First make a "boat" out of the jalapenos and scoop out the insides, then rinse with water.
Stuff with cream cheese
Take 1/5 of the sausage and make a depression or hole in it. Put in the stuffed jalapeno
Then wrap the sausage tightly around the jalapeno, making sure the stem sticks out (this is the "tail" of the armadillo)
Wrap with 4-5 slices of bacon. If you wanna use more, knock yourself out.
Then you throw them on the grill or in the oven at 350 until they are done...(about one hour or so)
Be sure to slather them with your favorite sweet BBQ sauce (Kraft, Sweet Baby Ray's, etc.) during the last 5-10 minutes so the sugar in the sauce will caramelize.
Finished Product:

i usually cut the stem end off so you can eat them whole in one bite but otherwise looks good

I would give you $100 if you could eat one of my Armadillo Eggs whole in one bite.

I assumed Cosmo meant so that the entire creation is edible, not that he meant you could pop the entirety in your mouth.

They have to be big if it takes five pieces of bacon to cover. Wonder how they would do with a different cheese?

4-5 pieces of bacon? That's not very economical when making 50 of them. I usually just use a half-1 piece when mass making them. I also only cover the half eith the cheese with sausage
I also make a mixture in a bowl with cream cheese, real cheddar, garlic powder, and Tony's as my filling

I use goat cheese and mix some garlic and fresh herbs in there. Way better than plain ole cream cheese.

Am I the only one that thought armadillo eggs were made completely different than this??
I've always made them by stuffing Velveeta, spicy sausage (browned), and jalapenos into a raw grands biscuit and baking... Sometimes i add eggs.
