My friends dad does it this way and showed us at the fishing camp. Ingredients don't require refrigeration and beer thins the mustard a bit.

Wet: yellow mustard, sriracha, an egg - whip all that together real nice

Dry: 1 part flour, 2 parts Louisiana fish fry, generous heap of Cajun seasoning - mix well

Wet into dry into grease

I was really drunk one night and accidentally used pancake mix instead of flour.

A few guests said it was the best fish they have ever eaten.

I couldn’t figure out why it was getting so clumpy. I realized it the next morning when the kids wanted pancakes

Anyone else ever used pancake mix?

If the fish has been frozen for more than a month or so Ill soak it in some milk before hand.

Yeah, for my fried shrimp. For my catfish, I do mustard, hot sauce, Zatarains Creole Seasoning and a touch of lemon pepper. Dredge in 1/2 blue bag Louisiana and 1/2 Zatarains fish fry. Drop fish at 375. Drain on wire rack.

hot sauce and mustard is great for shitty fish like catfish.

but when i have good flaky white fish; Snapper, Mahi, triple tail; i use my beer batter.

*A lot of, red pepper, black pepper, tony's.
*A Little bit of crab boil
*Whatever type of fish fry i find.

I was born and raised on the mustard soak. Pops still does it. It's fine but I much prefer soaking in milk and hot sauce. Dredge in half blue half yellow LA brand fish fry. Fry at 375 deg. Don't crowd the pot. Remove when they float and drain on a wire rack.

im a mustard and hot sauce guy, batter with lemon added yellow bag 2:1 with flour or bisquick, as well as a liberal dash of crab boil mixed in.

i swear seems as if I've heard recently to soak in sprite... i need to find that again and see what it says

it's a sin to use it on most fish. I will use it on redfish or specs, though. Otherwise, dip in milk and egg then coat with this

Soak in salt water. Throw into seasoned fine cornmeal. Fry in melted lard.

If you are ever in need of gluten free alternative... almond flour is a very good substitute... I’ve had to figure out that out for my wife

Yep.

I soak my fillets in milk. I don't know if it does anything except make them wet enough for the corn meal to stick. I use the milk in my hushpuppies anyway, so it works out. I usually season with salt, onion power, white pepper, cayenne, and sometimes seasoned salt.

I also used to add some flour to the corn meal, but I stopped doing that, and I think it's better without it.

Y'all are going to make me thaw out some crappie with this talk.
