Wild Hog Processing

Can anyone recommend a good place to take a wild hog to be processed around the BR area? Can I just skin it and gut it and take it to be deboned and cut up? I guess the best thing to do is make sausage with it? Thanks for any info.

You may have a hard time finding a place due to all the regulations on pig processing. Deer processing facilities won't do it due to the extra hassle.

Cut the straps out and throw the rest in the gut pile.

I use an outdoor edge and make a cut a few inches up from the tail and cut to the front shoulder down along the ribs. Do that on both sides and it opens up a nice rectangle area to pull out the back straps.
I’ll do this on the ground for the bigger pigs and the smaller ones I do in the back of the sxs.

Don’t do this. Unless you have a pile of them and can’t get to them all and no one wants them.
You can keep and freeze whole muscle groups without processing further.
Why waste good meat? I prefer hogs over deer personally.

Romeros in Central. They process hogs and deer year round. They do good work.

And Romero’s makes some banging venison and hog tamales. Meat has to be fully boned out is the only caveat.
