I've always called reds under 16" rat reds but I've heard plenty other people call smaller slot fish rat reds.

Bonus report: Hit grand isle yesterday am in the yaks and brought home 12 keeper reds. Most were 16-18" with a couple 22-23" fish.

About 10" or so and smaller.

The size you REALLY want to keep.

I always wondered how good a 11" red is compared to a 16"?

I bet they're delicious. I only really like reds on the half shell so a smaller one might be as good as a speck fried.

This. If under 16" it's a rat.

Under slot. When I'm fishing LA waters it's under 16. In MS waters it's under 18. Just a few nautical miles can be the difference between a beautiful slot fish and a damn bait stealing rat.

I've never found it to be mushy.

That's where I'm at. If it's 15 inches, it's just short. A rat is about a 10 inch 1 pounder to me.

A rat is too small to keep and a bull is too big

Put white trout in a slush of ice and salt water prior to cleaning. They firm up and are easy to clean then. By the way, if you freeze white trout filets, if you do not try to force thaw them, but just let them thaw over time, they are fine. Regarding rat reds, back in the day before size limits, we fileted rat reds (under 16") and they fried up real nice.

Yeah I put my white trout in cold slush at for about a hour before I filet. Coat in yellow mustard. Louisiana fish fry then straight into peanut oil. Make ya slap yo mama.
