They are booked up way in advance, but Mexican Gulf Charters is the absolute best.

Capt Eddie Burger with Fish Venice Charters. But you’ll have to book a year in advance

They will even target Bluefin Tuna for you.

Tuna Time out of Fourchon. Capt Paul. May is best for numbers. Fall/early spring for big ones.

Targeting is illegal; however, the time of year for an 'accidental' Bluefin tuna catch is late April to May.
Lots of options for summer tuna in the Gulf. I would recommend Down the Bayou charters in Fourchon.

Venice:
Relentless
Intensity
Mexican Gulf
Fish Venice
Paradise outfitters
Go long
In no particular order. Probably missed a few. 90% of the Venice guides will put you on fish if they’re biting.
Earlier in the year (lump season) is better for bigger tuna fish (150lbs+). Summer is good too, just typically not as many bigger fish around. Shrimp boat season later in the year is pretty good for bigger fish as well.

Most of the guys work together, they all have at least 2-3 others they talk to and work with.
A lot of it depends on your budget, what exactly you want to target, etc. Some of the boats include fuel and some don’t, fuel bill will be $800-1500 so keep that in mind.
Some of the price is the size of the boat and how nice of a boat it is.
