Go to a range, rent different ones to try, purchase one you like the best, go back into the and shoot it, go back at regular intervals and shoot it. Someone may love something but when you shoot it, you may hate it.

Ruger GP100 match champion with night sights loaded with federal 357b would be my choice. You can leave it loaded by the bedside for 30 years without touching it and it will still absolutely work. It will certainly be very accurate and .357 magnum is still the king of one hit stops in the handgun world.
Others will be along with some good semi auto suggestions. I carry a sig P229. It has been perfectly reliable since the 2nd magazine and I I shoot it well.
I am a revolver guy at heart. I started out carrying a GP100 and you would be very well served with one. I've still never found a semi auto that i can shoot as well as my single six or blackhawk.

I would say we should just sticky this post to the top of the board. It is fun to see which of us gets to post it first each day though.
I would highly recommend you look at the Glock 19 and 45.
A lot of people knock glocks, but Glocks are good first guns because they’re very easy to strip and clean and very reliable. They’re also so popular you can learn everything about them from thousands of videos online.
They’re not fancy and they’re not polished but they get the job done and they’re a good intro to the pistol world.
If you were buying your first car and you’ve never driven before you’re better off with something cheap and reliable like a Honda or Toyota than buying a high performance machine you know nothing about.
But whatever you end up buying practice over and over with it.
At minimum you have to shoot it enough that your body doesn’t tense up and flinch every time you pull the trigger.
Remember it is a tool. Not a toy. If you’ve never owned or been around guns before make sure you watch some gun safety videos and always always always treat every gun like it’s cocked and loaded.

Why not the full sized VP9? Ms Bapple loves hers and most of the women in my classes really like it.
To the OP, I’d advise your first handgun be a full/mid sized 9mm. You can always buy a gun for concealment later. The full sized gun will be more comfortable to shoot along with a few other advantages over a dimensionally smaller gun. Here’s how I see handgun size categories (bookmarked post from the past):

2. Full sized (barrel 4.25"-4.5"; full sized frame)
3. Mid sized (Barrel 4"; shortened frame)
4. Compact (Barrel 3.5"; no-pinky grip)
5. Subcompact single stack (Barrel 3"-3.5"; shortened grip; single stack magazine

Depends on your budget, the kind of gun (revolver vs. semi-auto), caliber (.38, 9mm, 45cal). The "why" part too? Home defense? Concealed carry? Both? Neither?
The easiest "point and shoot type" gun would be a revolver, and the Ruger LCR. Comes in many options, but .38 is the most common. Heavy trigger. Just pull and bam. Detractors would say you don't get enough rounds given it has 5 rounds and re-loading is more difficult.
These days, with the cost of ammunition sky rocketing, most are going to recommend a 9mm semi auto. If you have a budget, by far the best option right now would be the Taurus G3C or it's larger sibling the G3. You can find these for around $300 or less.
If it's purely home defense, I like the CZ P10F P-10 F. Full size. 19 rounds. CZ quality and reliability. You can find them on Gunbroker for under $500 shipped all day. Example: I was recently tracking this one for a bid.
Concealed carry? I really like the HK VP9SK. On the pricey side, but a sweet gun. One Example On Gunbroker.
With any of these you need to commit to taking safety courses and training frequently.
EDIT: Forgot to mention my primary gun is S&W M&P 2.0 Compact. They can be had now for upper $300's to mid $400's. Great gun. Never had a FTF or FTE. Can use the extended 17 round mags with a base plate. Love it.

Really tho I already have 2 VP9’s In the safe. I just always wanted a SK as well and it might be easier for her to use...or one of my full sized ones. Since things in stock suck everywhere here I figure I can take her to range and let her try both. Either way I get a SK in my safe

I was actually concentrating on Mid-sized options in my post. Grip large enough to fit your whole hand without relying on the mag for pinky support. Still high capacity (13-16 rounds). Large and high capacity enough to be easy to shoot as a home defense weapon and small enough to conceal carry if needed. I've never found mid sized options to be appreciably harder to shoot than full sized.

You forgot the Glock G43X which has aftermarket mags holding 15 rounds.
