We usually deep-fry battered fish filets - taste is great.

But a friend said we should try air frying. Tired it once and is was a disaster - batter dripped off fish, nothing tasted good at all.

Anyone with tips on air frying fish (talking about sac-a-lait, bream and small bass) ??

I have used the Louisiana Fish Fry breading for air fryer, and it came out pretty good. If you are talking batter as in a wet batter I think that would be a disaster.

I tried the air fry batter and it still came out terrible.

But I always coat the fish in mustard first to get the batter to stick. What did you do to make it come out half decent with an air fryer?

Batter in milk, egg, mustard, what’s dis here sauce, salt and pepper then flop fish filet in corn meal. It won’t drip and air fry very well.

I tried it once with crappie filets, wet batter then dusted in zat's marti gras so it wasn't drippy.

They turned out OK, better than I expected, but nothing like 350* peanut oil.

I don't think of air fryers as fryers, I think of them as miniature turbo ovens.

I'm either frying the fillets the real way or not at all. If I want something besides fried fish, it gets blackened.

Mustard is good at covering up not-so-good fish flavor from not-so-good tasting fish.

I think of the old Jerky Boys line from the insulation job call- "I put mustard on it and eat the frickin' shite"

I haven’t done it in an air fryer, but I can’t really tell much difference in taste between mustard batter vs egg wash for regular fried

Yeah. Don't fry fish in an air fryer.

Exactly. Deep fried in oil, it comes out great and tastes no different than egg wash.

But when I want to fry small batches, the air fryer would be more convenient than dealing with oil, but it tastes like shite and doesnt get a good crisp

No air fryer experience here, just came to say I soak filets in milk/egg/sriracha mix - it add a little spice and definitely helps with any fish smell/taste. Use the blue bag LA fry and air out on drying rack not paper towels for crisp fish. I wonder if air fryer would accomplish the same in that you don’t have to drip oil off the filets afterwards.

Then you need one of those single basket electric fryers. Has a plastic lid when you get done.
I can’t post pictures. Somebody hook him up please.

For small batches I just dust with some prudomme's and pan fry/saute in a little oil and make a po boy. Not the same as deep fry but works good enough for a sandwich and much less hassle than deep frying, for small batches.

I would never use a wet batter in my air fryer.

I haven't tried fish, but when we were going keto we fried chicken in the Air Fryer. I'll have to find the recipe but it included shredded cheese and pork rinds. It was really good.

correct

Catfish get mustard, bass and sac-a-lait straight from cayenne spruced water to the batter

Thanks for all the replies.

A. Now I don't feel so stupid about messing up a batch of filets in an air fryer.

B. I'll continue with deep fat frying "forever."
