I believe it's I-70 that has a bike trail for the 70 miles between Dener and Vail. Most of it is in the median. My brother rode that one weekend.
The drive from Anchorage to Denali features glimpses of the mountain, from very far away, up a railroad track.

The PCH, or "the 1", is a must for you on your bike. INCREDIBLE. I live in Co and eat up the canyons and mountain roads here that are some of the best, but the PCH is beyond those in some respects. Go do it.

I tell my wife that if there's ever a moment we consider moving out of Louisiana that Colorado would be high on the list, we took a road trip to Denver, then onto Crested Butte where we drove up to Paradise Divide and camped for the night and I can't wait to make a trip back there to do more of the same. The switchbacks up to Paradise Divide in a F250 were interesting. Pictures never do justice just how steep this was, we now have a 4Runner to take for when we return.
About 10 years ago we took a trip to Sturgis, SD and did some riding up there, Needles Canyon, Mount Rushmore, Spearfish Canyon, Devils Tower, etc. I'd been to a couple motorcycle rallies and thought most of them to be pretty lame, Sturgis is the only one I'd consider doing again just for the scenic riding.

I've never trailered my bike to any destination. I leave my house on it and eventually make it back home.
My biggest gripe about heading from N.O. to So. Cal. is that gawd awful ride across Texas, especially out toward El Paso. That is an entire lllooonnnggg day in the saddle just getting from one side of the state to the other.
There's a lot of nothing but open land and tumbleweed for much of that leg of the journey.

Never done the SD area, but as close as we are need to go out there. Some damn cool geology!
Oh and next time you go, consider heading to the San Juans with your 4wd. Some of the trails down there from Lake City over to Ouray and down to Silverton are a must see.

Agreed Texas can be a drag to get across. Consider a more northern route that gets you above DFW area and then on to the panhandle. From there you can go north through Ok to eastern Co and then west or through NM and west. Albeit a longer ride but less boring than southern Tx route.
Once you get into Co there are many choices to get to Cali. We have always gone through Utah, Arizona and Nevada with some cool areas to see.

Not driveable by car but the scenery on the Cumbres & Toltec Train route is just outstanding. Did they train ride a few years back in Nee Mexico and I was impressed. Just beautiful country side.

I’ll add The Pig Trail and The Arkansas Dragon. Both fantastic roads in Arkansas through the Ozarks.

I-70 from Vail Pass to Glenwood Springs is incredible.

Did the Hwy 1 trip from Fort Bragg all the way down to San Diego.
The whole trip was awesome but the stretch around Big Sur was probably the best. I would highly recommend it.

Most scenic I've personally driven? Highway US 395 from Lake Tahoe south to Barstow. Along the foothills of the Sierra Nevada mountains it's just filled with spectacular scenery. At one point in the drive get to see the highest point in the US 15 miles to the west on Mt Whitney while about 70 miles to the east is the lowest point in the US in the Badwater Basin area of Death Valley.
