Deer caliber of choice and at what distance do you 0 when sighted in?

I'm transitioning to using scopes w/ the Burris Ballistic Plex reticle (kinda like mil-dot reticles) on my handguns. Next yr the guns w/ the BP (Savage Striker in 308 Win and Remington XP-100 in 7-08) will be dead on at 100 yds; that should put them dead on at 200 yds w/ the next horizontal reticle. Otherwise my handguns are 1 1/2" high at 100 yds making them dead on at 150- 175 yds.
