Yes and it also says all animals, which would mean fish, dogs, cats, etc.... I think you are missing the next part of the clause.
Stop arguing needlessly cause some are interpreting that statement in a manner that does not agree with what youn want.

Moms neighbor wanted to have a few chickens and ducks, and she said sure no problem. The other neighbor also agreed and their lots backed up to a vacant field. The lots were deep so no real smell issues but damn the flies

Not getting into the language, the covenants in my neighborhood don't mention poultry specifically like yours but the rest is the same. We have 4 and they're named.
They don't stink.
They aren't noisy.
My neighbors have no idea that we have them except when we hand them eggs.
the builder of the house next to me (I sold him the lot) tried to start some shite with me but I threatened to sue him for harassment and the HOA was actually on my side (more because they hated the builder).

I am done with thread. I knew some wouldget hung up on the first half of the clause, despite having exceptions. I knew some have incorrect opinions of hens/coups. Like I said previously this is exactly like saying "No Person, man, women, or child can purchase alcohol except if they show I.D. and are above 21 yo" and just saying "no man can purchase alcohol" There is clearly point of exception where a man can purchase alcohol despite being listed in the initial statement. I really just wanted to know if the language in the second half was weak enough and a few confirmed it for me. Since the language is weak, there would still be push on either side, but I dont see how the exceptions could not be honored

But also to answer your question. They are excluding poultry(And all animals, live stock and insects) used for breeding or commercial use, like they stated in the exception
