Used to catch these off the local piers as a kid. We would cook them all different kinds of ways, but my dad thought there was something wrong with us. We used some type of terryaki marinade on blacktip and grilled it one time and it was pretty dang good. Don't think I've eaten any shark in 15+ years though.

That's kind of how I feel about the fish that are traditionally smoked. They are best smoked because that's one of the only ways to cover up its natural flavor.

I'll go: grouper, tuna, salmon. All fresh of course.
If it's been frozen though it's hard to beat how clean a red snapper still tastes after months of being in a freezer. Gotta cut out all the red spots tho before you freeze.

I'm Not big on Tile- I think the whiter the meat the better, and tile is clear.
Perch is up there just because all the perch i catch are small and the super thin fillets are perfect fried.

I will say that fried choupique is pretty tasty, but you have to know how to do it or you're going to have a mess on your hands. Def can't freeze that
