Would you eat this? Rare cheese, Casu Marzu, is filled with live maggots. Purposefully.

I wouldn't but to each their own. I am sure some of those folks would consider boudin and cracklins repulsive.

This might come as a shock to some, but Sardinia is not on my bucket list of places to visit. Pass on the maggot cheese.

You can also potentially not be allowed into the us depending on the variety as you can potentially bring invasive species here because of it. Remember hearing about that during some food show that covered this

I never had one like that.
I did have one where they drill a hole and put maggots in.
After a while they are removed. The cheese is washed and then resalted. Then dried/aged.
Supposedly an aphrodisiac. Tasted like piss.

I lived in Sardinia in the early 70's. One of the first things I witnessed was a construction worker eating this and scraping the crumbs (maggots) in a lil ball and eating them like bread crumbs. Never tried it but it is harmless.

I'd give it a try. I've tried some weird shite in my travels. Most of it I haven't wanted second servings, but hey, you only live once, so go try it at least once.

Cracklins are gross, but to be fair, both boudin and cracklins are cooked with no bugs in them.
