If I would give you 11 and the dealer showing a 6, would you bet your paycheck on that double?

Yes, because I’m not an idiot who has never saved anything.

It amazes me (but it shouldn’t) how many people I know that live paycheck to paycheck even though they have a steady job.

That would be an illegal bet. You can only double your initial bet.

Single deck, double deck, six deck? How many cards are out? How many people playing? How many face cards on the table? I wouldn't have my paycheck up there to start with to worry about doubling down. Way too many variables. Need more info.
