I had it in Tokyo, not realizing what I was ordering and not wanting to insult them.
As soon as I got back to the hotel, I googled “salmonella incubation period”
It turned out ok and didn’t get sick. But like the OP said, in Japan, it’s farm to table in a couple days...in the US, it’s a couple weeks.
Eta: oh, and it’s chewy. Steak is tender raw. Chicken is not. Wouldn’t eat again.

I'm sure the spices and glazes or sauces change the taste from straight raw chicken to something a bit different.

Honestly, chicken tartar, done right, would be an interesting dish that I would try.

Went with the GF to a team building work function at a place here called Ippuku in the East Bay where some of the dishes were raw chicken.
I told the GF the company was trying to thin out the payroll the following week or two.

I’ve eaten raw chicken meat from a freshly slaughtered chicken. The texture is very unexpected.

No and I do not believe that doctors and nurses should waste their time treating food poisoning in people that are stupid enough to eat raw chicken.
