Plenty of fat frick rich and middle class people. Plenty of them have fat fricking children.
Stop eating fried food all of the fricking time, first of all. Bread too.
Sodas! How many of you shove a soda into your kids faces? Or acquiesce when asked? Because it's setting them up for a lifetime of unhealthy choices.
Drink more water, eat less bread, eat less fried shite, walk somewhere occasionally, etc.

In most cases it isn’t the scotch Irish descendants driving those statistics.
But to answer your question the welfare state did it, both to the black community and the poor white trash. These folks used to work hard to get by, now they do minimum work and collect from Govt.

Change it. My wife and I get out in the heat all of the time...oddly enough, it doesn't bother me like it did when I stayed indoors more.
It's always super easy to get seated, even at trendy places, if they have outdoor seating. Because Southerners are too pussified to leave their AC, much less sit in heat. But blaming it on prior generations or technology is a cop out.

This and it’s more than just fried food it’s our eating habits as a whole.
We love seasonings, diet is meat heavy, we eat large portions. The amount of food restaurants give you here compared to other areas of the nation is insane.
Go to a restaurant out of the southeast it seems hard to find a steak winner with a larger than 12 oz steak.
Where I live 16oz is the small option. Most take up the entire plate and you get a baked potato smothered not in sour cream and chives but rather cheese, ranch, and bacon bits

Since moving to Idaho, I think I’ve seen only a handful of American born black people. Most black folks I’ve seen here are refugees.

Interesting how often climate has been brought up....that also has to play a pretty big role. Since becoming acclimated to A/C, it's unbearable to even do something as leisurely as golf on a hot summer afternoon.

To much of the country, eating "healthy" also includes organic fruits and vegetables, free range meat, etc. That stuff is not only incredibly expensive but hard to find in rural areas because there just isn't demand for those products.

I still find the South to be based off tough, get it done yourself kind of people. Yea, we like to eat, we like to cook for our friends and family, we like to drink and party. I don't consider Southerners as couch potatoes.

The fact that many closed has more to do with them losing money than caring about their customer's skin color.

Unless Walmart goes out of business any time soon, it's not going to change. OP was talking about the old times...you had a lot of mom and pop general stores with fresh produce and meat from the local farmers (no hormones, antibiotics, non-industrial farming methods, etc.) but all that has been replaced by mega stores dealing imported meat filled to the gills with who knows what kind of medicines and feed, less fresh vegetables sprayed with god knows what, and aisles of processed foods. This all certainly has contributed the OP's observation but, yeah, it's not going to change while we're alive.

Fry In America (which is an excellent docuseries, when you can find it) touched on this when he visited North Dakota. Not the south, but his argument remains.
Diets were intended to be calorie rich because of the physically taxing nature of the work that was required. You can't plow fields and clear brush on a diet of kale and yogurt. Hearty, heavy meals were staples because you needed the energy to do the work.
With mechanization, efficiency, and air conditioning, people didn't need to work as hard as they once did. But their diets maintained such cultural significance that they didn't change. As a result, many of our brethren ballooned.
Add that to our bullcrap culture of fat acceptance and other progressive garbage, and society as a whole is going to diverge into the healthy and fit vs the fat and sick. The latter are getting ravaged currently.
