1) good food
2) good drinks
3) away from home
4) pretty fun seasonal events
5) usually around other people having a great time
6) free access to public transit to get to/from everywhere you want to go, if you are staying on-site
7) don't really care what you or anyone else thinks
8) amusement parks have fun rides
9) tons of hidden adultish jokes
10) thrill of finding Hidden Mickey everywhere
11) plenty of decent theatre with pretty good actors, albeit all appealing to children, it appeals to adults, too, in most every case.
12) really just number 7, again

Having been there 8 timers (always with kids), I can say that you could have a very kick arse time there without them.
As noted by others, there's a lot of things there for adults to do (including rides) that can be really enjoyed at a much more leisurely pace that you would not have if you are trying to cram every bit of the trip in for your children.
I could easily spend a week long trip at just EPCOT and Animal Kingdom. Not that I would want to, but it would be a pretty good vacation.

My wife and I went on our honeymoon and had a great time. Great walking around without kids, drinking at Epcot, eating at nice restaurants, doing things at your own pace without worrying about your kids. Just a pleasure to do without kids really.

Golf, Spas, marathon/races, Victoria and Alberts, nostalgia, Disney Springs, food and wine festival, etc. if we aren’t counting the rides and shows themselves. We have DVC and can stay in a condo within walking distance to Epcot or MK. Otherwise, you can use Disney’s private transportation service if you want to avoid people in general.

Has the OP been to Epcot (can't remember park name) the tour of countries is a tour of beer.
I have seen creepy folk too though. One guy sat all alone eating lunch somewhere in animal kingdom. He looked stright out of Central Casting for a pedophile, and his interactions with all of the staff in character was over the top. You'd not let him babysit.

I say this as a loving parent of two: doing "kid" things without the kids can be fricking bliss.
