do you not think it has something to do with their language and language diversity of latin roots and other european influences?

A few factors.
1) Cultural sorting. Indians who have moved to the US tend to be from (historically) wealthier and more successful strata; they aren't crapping in the street, they're trying to get out of horrible conditions and improve their situations. They sensibly put a high value on education as a means by which to overcome limited circumstance. The boot-strap method
2) Two-parent involved families- You want to see successful kids? Check on the level of parental involvement, and the support they have at home.
3) The creation of a subculture. Indians do well in the spelling bee, and it provides an example to emulate; parents want to see their kid succeed at something their conationalists are good at, so they train.

Also Indians aren’t very good at music or (actual) sports. So academics is the one thing they can really excel in. Culture also plays a massive part in it. As an Indian, I can say that you and your family will be looked down upon if you don’t achieve very much in your life.

In my ~20 years of working closely with Indian folks in the IT industry, I can assure you that they are generally no more intelligent than Americans...I would say they are less intelligent in some ways - possibly due to cultural communication differences, but I digress.
So what about the spelling bee is so obviously appealing to this group/race?

All of the ones I work with are robots and highly intelligent with great work ethics, but have absolutely no creativity or ability to ad lib.

Yup - I had this exact thought. Too many times the culture card is played when discussing negative outcomes from north Baton Rouge crowds, but this too is a cultural thing in my opinion.

Its a pride thing, indians are insanely good at working hard to impress their parents. Other asian cultures do it too but nothing like them
