The meat ends up donated to local villagers.
The hunt is highly regulated and just the cost of a tag for certain species is a fortune (tens or hundreds of thousand bucks). The money westerners spend on buying hunting tags and permits is how those African countries fund their wildlife management, conservation, and anti-poaching efforts. If you eliminated the money from western hunters, you eliminate the funding that pays for protecting habitat and to stop poachers that kill anything with a black market value.
And for elephants, lions, rhinos, and a few other big game species...the hunt is for a specific individual animal that's been identified by the local guide / wildlife managers. Usually one that's old and past breeding age. So a hunter taking that animal has no impact to the long term population of that species. But the hunt provides much needed meat for the villagers and funding for that country's wildlife agency.

I was lucky and got to meet an African man who was a ranger whose job was to protect rhinos.
He had some great stories. He was also very clearly a badass dude.

Anybody who kills any of those three animals should be strung up and hung by their nutsack. And I'm an avid hunter. But hunting any of those three animals is just ridiculous.
