I always assumed he meant IHOP, but they were afraid of getting blowback from the brand, so they changed it up just enough.

They had some explanation about this. IIRC, apparently some people up that way in a certain part would call that type of joint a pancakes house.

Original Pancake House in Dallas is legit and absolutely packed on Saturdays.

Apple Pancake.
It's takes an hour for them to bake it, so they cook them all morning. One day a friend and I ate huge breakfasts there. They gave us one to go, and gave us heating directions. This was at the one in Addison, when I lived up that way.
