Because that is how it is spelled in Turkish. Like Spain is España.

True, but why are we all of a sudden starting to insist on this spelling in English?

President Recep Tayyip Erdogan's government hopes the rebranding will give a boost to the economy as visitors start to return in large numbers after two pandemic-depressed tourist seasons. The Ukrainians made that up to try and show the world that they're not actually Russians. But everyone knows they're the same group of people and the difference between the Russian and Ukrainian languages are extremely small.

Can someone let Apple know so they stop capitalizing the word "turkey" every time that I type it?

Partially - he also fricked up the "o" (it is unstressed, similar to the short "o" sound in English) which is the same in Western/Latin and Cyrillic.

(Translates to: Russia - and is feminine in gender.)

Now, if he is not a speaker, he might be conflating the language with the nation, but the first vowel in "Russian" in Cyrillic is an "oo" sound, which looks like an English "y".

(The large blue title words translate to: Russian language - and is masculine in gender).

Apparently their text book quality has improved over the old days of the Soviet Union. We used the "Russian for Everybody" textbook, reader, and workbooks for the Russian language courses at LSU in the 80s. They were printed in the Soviet Union and used some of the worst paper you could imagine. It was somewhere in quality between newspaper and gas station toilet paper.
