First thing you should probably do is take a k thermometer or some other accurate and calibrated thermometer and check the actual air temperature in and around the thermostat.
Most thermostats, out-of-the-box, don't display an accurate temperature. Most Ive found are off by at least 3 or 4 degrees. Assuming your thermostat isnt a cheap piece of shite there should be a calibration setting somewhere in one of the menus.
Start there.
Also, consider a dehumidifier. I don't know why those aren't standard in homes in South Louisiana. You could probably set your thermostat at 78 or 80 if the humidity was only 30% in the house. Even 70° at 60 or 70%+ humidity is pretty uncomfortable. This is very evident around here in the spring and fall where the outside air temperature hovers around your indoor set point and so the air condition never kicks on but the humidity starts building up and it gets really stuffy. I end up getting complaints from my tenants every year around that time. If you think explaining set points to women is difficult, try explaining the concept above to them.

I have the exact opposite problem. She gets "cold" and puts the AC at 80 to 81 degrees to warm up. Then the humidity comes in the house and it gets sticky, then she puts it to 78 and the AC kicks on full blast (it is variable speed) and out comes cold moist air which makes the house feel cooler than it is. Then she goes back to 80. It is ridiculous.
I tried telling her that if you keep the AC on 76 for several days, the humidity is removed leading to a comfortable house, and the variable speed ac keeps the house from getting that sticky stuffy feeling. It would be better overall.
Unless I lock the thermostat, I lose the second I leave the house, then the cycle starts all over again.

Just turned mine up to 68 when i walked in this morning. Wife was was cold. Around 1-2, I’ll bump it down to 66, 67 because the heat indicies have been 105-110 around here for the last week.

I have a hard time reading what you're writing. However you are wrong. If it is an old style a/c unit, then it doesn't matter if it's set on 72 or 80 if it's hotter than what it's set to. As long as your filters are clean and no problems, an undersized unit will run and run and run. Setting it on 72 doesn't make whats coming out colder. As far as 'handling' the wife, just have a conversation with her. I would kill for a wife that was hot all the time wanting it colder.

Sounds like a problem with inadequate insulation and a leaky, drafty house.

If that guy's got it at 78 and it's running for hours, something is way wrong. I'll put it at 75 or above when we leave on vacation and it'll barely run to the point that it's noticeable on the power bill when we're gone.

This. I'm not exactly an HVAC expert but mine kicks on periodically year around based on the humidity in the house. At least I think that's how it works, maybe it's just on a timer. Either way it's always comfortable.
People also need to see if they actually have enough unit for their house. I have a 5 ton in a house that doesn't actually need it so I can hold 72 just fine even when it's Africa hot. Still kicks off throughout the day. If the unit is running all day and can't get past 76-77 then you need to upgrade when it eventually craps out.

Before the shutdown we used to turn ours up during the day when we weren't home. The last several months it's just been on 71 all day and night and I've noticed no difference in our bill so I just leave it at that temp all the time now. I know they are reading the meter because I've seen the guy doing it.

I keep at 72 in the day and 68 an hour before bed. 68 is a perfect sleep temp.
