no, you open or you close, that's the two shifts. Opening is best for sanity; prep, lunch, cleanup and reset the line, out by four. No going to the club or bar after work.

i always wondered how this general group of people can afford to constantly do drugs and go to bars every night on $9.75/hour

food cost should be near zero for kitchen guys, and if you are front of the house you get paid in cash everyday

What kind of place? Most places stick the frozen dinner in the microwave and bring it out these days.

They are a very resourceful lot. From what I recall, and this is going on 30 years, they seemed to all operate in their own economy. The drugs did see to appear like magic. Often times it seemed to be sort of part of the front of house “tip out.”

After six years in the business I can tell you it was back breaking work, surrounded by a mix of high school dropouts, drug addicts, alcoholics, and a few cool underachievers.

At best you’ll start as a dishwasher or prep cook. Part time will turn into full time as you see that half of the staff can’t be counted on.

The upside is a free meal if the management is decent.

Be prepared to go home smelling like grease and garbage.

I am pretty hot, but not showing pics. I brought this up to wife (no pics) and that was her first remark. "you just gonna go work around a bunch of young college girls" I laughed and told her I no longer have game, bad thing is, she believed that to be true. I've never cheated, but knowing me, I'd be the only guy on the planet who tried to cheat on his wife and still couldn't even get laid.

Was in the business for thirty years. Which included three years of culinary school. Never worked at a fast food restaurant, all hotel, private club, free standing, restaurants, the wife and I owned a catering company and a 120 seat restaurant from 1996 to 2015. If it's something you want to do, I would go find a privately owned restaurant, get with the owner, tell them it's something you always wanted to do. I bet they will find a spot for you. I loved it for a long time, but I fell out of love with the industry. I miss it sometimes, but never enough to step back in a commercial kitchen. Go have some fun.

I'm curious, when food gets sent back who's check does that come out of, the waiter/waitress? Wife (no pics) has celiacs and we went to steakhouse a few weeks ago, explained to waitress she cannot have anything gluten around her food. Food came out with bread on top of the steak. They took it back and made a new plate, it was definitely not the same piece of steak when brought back out, but our waitress was actually pretty awesome and worked hard for us, it's complicated as hell for my wife and the staff when we go eat. I felt bad, but tipped 20% and added another $10 on top of it.

I have a good friend that owns a restaurant and I've thought about talking to him about it. I just wanted more perspective is why I asked on here. Not sure wife is up for her husband being a line cook at a restaurant though as a part time job. She definitely didn't seem enthused about it when I brought it up.

I was once at a waffle house at 3am. The kid manning the griddle was a magician with the spatula. He was getting cheered on by the crowd.

It is not legal to make them pay for it. You can terminate if you want but you cannot force them to pay for it

The variant I got from a close relative who had a 1970s stint in haute cuisine in NYC was “Just put that anywhere.”

I’ve used that my entire adult life with anyone who drops something around me.

And even to myself on occasion.

Mostly now on dropping cell phones.
