I was extremely young when my dad’s mother passed so I have nothing from her.
My mom’s mother made the best vegetable beef soup and her smothered “fresh from the garden” pole beans was unbelievable.

My dad’s mom made everything good, but that’s because there was always a big can of Crisco lard in her kitchen, and she used it in everything. Also some arterial problems on that side of the family.
My mom’s mom made a roast gravy that looked like melted dark chocolate and tasted much better. She didn’t show anybody how to make it.

Hard for me to pick a meal but mine made a homemade coconut pie that was straight up off the chain. God, if only I could have another slice of that pure heaven

One grandmother would be shrimp creole or her pot roast

My grandmother’s red beans and rice were legit. And the split pea soup she made was awesome. She always cooked the perfect turkey every Christmas, too. The family has all of her hand-written recipes but no one can get it exactly right.

My Nana was such a good cook that it's hard to pick a single favorite. For her holiday meals I loved her oyster dressing and her yeast rolls. Oh, the yeast rolls were addictive!

Everything she made for Thanksgiving.
Also her chicken pie. I swear it had 2 pounds of butter in it.
Also her brunswick stew. Never had any better, that and a big chunk of cornbread was awesome on a cold rainy day.

My maternal grandmother fried chicken like nobody’s business. Absolutely perfect.
My paternal grandmother was an amazing country style cook. My grandfather had about a 3/4 acre garden where he grew every vegetable they ever ate, I believe. He was a man who had expectations as well. He expected a full breakfast every morning. Eggs, homemade biscuits with homemade jelly, one of bacon, sausage, or country cured ham (the really salty kind). And at lunch there was a full meal. Usually some sort of meat dish with some combination of fried okra, fried green tomatoes, fried squash (are you seeing a pattern?), green beans, corn, cornbread, peas, etc. amd there was always homemade cake or pie.
The one meal that stands out to me was fried chicken, ironically enough made by my paternal grandmother. She also made a wicked fried chicken gravy with the drippings. I ate so much of that gravy and biscuits that I literally made myself sick. What I wouldn’t give to be able to taste that again.

I always loved my MeMe's vegetable beef soup with cornbread and a glass of sweet tea. Also, her cornbread dressing. I've gotten close, but it will never match hers.

Everything she cooked was good but what I remember most is when I would kill a few squirrels and she would make a stew. Delicious!

I'm surprised how many 'chicken and dumplings' responses in this thread. It's not really a cajun dish as far as I know. Neither sides of my family made this dish.
Anyway, my maternal grandmother was the best cook in the family, and everyone learned from her. Number 1 was easily pork roast, rice & gravy.
However, her fried bread dough could not be denied. When I was a kid, there were home made dinner rolls at every lunch... think school cafeteria rolls. There was always bread dough in some state of rising/baking, etc. But in the morning, she would stretch it out to the size of a pancake, and deep fry it. We'd have it with powdered sugar or syrup, or just plain with coffee. Those are the best memories of Mawmaw.
