I like a lot of the basic cheeses and don't get too exotic.

A nice sharp/extra sharp cheddar or aged Swiss is nice. But, shredded parmesan, mozzarella and even provolone is a nice change up.

Juustoleipä, also known as bread cheese. You grill it similar to halloumi cheese but it taste more robust and buttery.

A few years ago, I bought some 8 year aged cheddar from a small cheese company that made the festival rounds. It was a white cheddar and was some of the best damn cheese I've ever had. They were out of Wisconsin, but you can't buy online from them. I haven't seen them sense. I have their card around somewhere.
