When I moved to Houston after Katrina, the only food trucks were taco trucks run by Mexicans and locals called them roach coaches.
I thought they were great and they were super cheap.
You could eat like a king really good stuff for $8-9.
Same shite now is double and not as good.

Yeah gone are the days when I'd make a run for cheap but delicious street tacos from the close-by food truck in Houston.

Food Trucks suck.
Especially at captive locations like the NRG Convention Center in Houston where there is nothing but these overpriced Food Trucks outside the facility.

I have a problem paying for overpriced terrible food and trying to enjoy a meal while I sweat my arse off walking around in 95 degree weather.
Some people just really get off buying something from the trendy Food Truck

I bought a Cuban sandwich at a certain craft brewery once. I don't remember the price but it definitely wasn't cheap.
My complaint was, it took over 20 minutes to get my order. Just a sandwich!

The point he is making about food truck pricing jumping the shark is valid.
Food trucks really took off during the great recession: restaurants were closing and new restaurants weren't opening. There were a bunch of talented chefs who found success using the model of opening up a food truck that offered fun/innovative street food and relying on social media/word of mouth instead of traditional marketing/pr. I seem to recall one of the first notable ones was korean barbeque in a taco/burrito/burrito bowl/nacho format.
Before that, food trucks were just offering cheap eats at blue collar work locations.
Food costs aside, the food truck model works if your target market is either hungry blue collar workers who want cheap, quick, and tasty eats at the job site or if you do something novel/cool that gets urban dwellers with disposable income to eat at wherever your food truck is posted up instead of eating at a restaurant.
The food truck model doesn't work if the operator is going to offer standard food options (even "trendy" ones like smashburgers) at higher prices (that include a convenience upcharge). You can do that if you are running a food concession at a concert, outdoor festival, carnival, etc.

Just come out to Katy where there is, and will be home construction going on for the foreseeable future. There are never any white people in the lines, just hispanics, so I'm sure it's cheap.

I actually agree with Minho on this.
Food trucks use to be cheap and delicious. Then the privileged hipster whites got a hold of them and fricked it all up. Made them into an extension of the Millennial burger joints.
