just call and ask to speak to the manager, explain what happened and pay your bill.

you help the manager by reporting this so he can discipline/fire the bad waiter (or find out WTF was going on that night) and you pay your bill so you arent a theif

I'd advise this.

My first thought was that the waiter quit or got fired without letting anyone else know he had a table.

Funny thing is if the OP had found a manager and explained the situation, he may have even been comped the wine for his trouble.

Absolutely.

I'm envisioning this ghost town, Twilight Zone setup where he's the only human being in the restaurant - kitchen included.

That's pretty much the only way I'd ever just leave without paying for things I had ordered and consumed.

Sounds like my experience a number of years ago at Ruth's Chris in laughayette, although hardly a 5 star.

If there is no one there to take your money, it is not theft. They are not doing the bare minimum to serve customers and you are under no obligation to waste your time waiting for a mismanaged restaurant to get its act together. If you are a working man, leisure time is valuable and scarce, particularly with your wife and loved ones.

If you feel inclined, you could call them, ask for the manager and offer to pay for the wine after chewing his arse out for bad service. If he asks you to bring payment to the restaurant the only response is "no, you come to me to pick it up. I was there and attempted to pay, and my time is more valuable to me than your time."

It ought to come out of the waiter's pay or out of his arse. He's in a profession that lives on tips, and if he can't understand what courtesy and service require he needs to get out of the business. I usually tip between 20 and 50 percent, but for bad or rude service I don't mind not tipping. A good serving person can easily bring home a couple hundred a night depending on how mgmt requires a split. If a waiter isn't consistently making that, there are other jobs better suited to him.
