How busy was this place? How’s it possible to not see your waiter for an hour and then the hostess booth is completely vacant?

You still have to pay for what you ate/drank. At a minimum he should have spoken to a manager and possibly got it comped.

Literally no different than turning back an over cooked steak.
If you get up and wish to settle your bill because of poor service, it’s kinda unreasonable to charge the service not provided.
What you think this is, a hospital?
The difference is in if you obtained benefit from it.
Most places will make it right if you take a few bites and you don’t like it/wasn’t quite what was ordered even if it means throwing it away.
What they do dig their heels in over is if you eat it all and then suddenly raise hell about it.

I didn’t mean in the orginal post that I would eat it and then not pay with the delay.
I meant I wouldn’t accept the flurry of “OMG IM SO SORRY LET ME GET YOUR STEAK FOR YOU RIGHT NOW!!!!!” when you attempted to close the bill. Why would I want a chilled steak that has been sitting out for who knows how long and who knows how they will reheat.
