There is a lot of stuff to do in and around BR for a city of its size. If you're bored then you're boring.

But many of these things seem to cater more to either college students or families, IMO. I had a blast growing up in BR and going to college there. Only after finishing college did I realize how little there was going on for the mid-late 20-somethings that hadn't already begun popping out kids.

Being serious, are you talking about late night things or are you talking about hobby type things? What sorts of opportunities are available in other cities that you would want to have here in BR?
If you're looking for weekend or hobby type things, there are a ton of outdoors and sports related activities that are available for people, no matter how old you are. 90% of the battle is showing up. The dates and schedules are almost all available online at this point.
Just off the top of my head
-BREC has some actually pretty solid tennis facilities and has open tournaments for all skill levels
-BRSA, or if you're not into organized soccer, the LSU pickup club is available for soccer
-There are a couple of well-attended running clubs if that's your thing
-There are a number of hiking and kayaking opportunities within about an hour of Baton Rouge, and much more if you make a little more of a drive. If you really want to go the hipster route you can do foraging and naturalist (there is a Master Naturalist chapter here in BR) stuff very easily around here. You can rent kayaks and canoes from a couple of places.
-Hunting and fishing sounds kind of red-neck if you didn't grow up doing them, but they are popular here for a reason. Tons of opportunities in the area.
-There's actually a pretty active homebrewing community here in BR. LA homebrew tends to be the center of it, but if you get on the calendar and pay attention to when they're released you can get tickets to the beer festivals or release parties without too much trouble.
-I know they attract a lot of college students too but there are some good opportunities for live music (playing yourself or just going to listen) in the BTR area as well.
-There's got to be more out there with just a quick search; I'm just listing the things I have personally participated in in the 10 yrs since I graduated from LSU.
And when you start doing something, it might take some time to meet the right people (tennis or soccer) or figure out the best places and times to go (hunting, fishing, kayaking, etc.) but you'll get there if you keep at it.

Like concerts with major acts? I'll admit Baton Rouge doesn't have many big bands come through. What else? Theatre? Contra dancing? Clubs?

Not so much major acts. Plenty of those come through and I don't bother going to them.
I don't really feel like listing a bunch of random events, but to generalize there just aren't a lot of places that are specifically geared towards what could probably be best described as the "young professionals" crowd.

You basically listed running, soccer, and a few outdoor activities that are well outside of city limits. Hiking in south Louisiana

Yeah, I lived in BR off and on for 10 years and like to be outside doing shite when I have time off. BR has a couple of places I could take my dog, Bluebonnet Swamp maybe once a year, horse riding at Farr Park, and I could frick around in the LSU lakes once a year.
Could spend my nights eating at one of the few restaurants or at Ivars/ZeeZees. Maybe, just maybe the Varsity would have 5 bands a year worth seeing. Probably 10-15 restaurants worth going to in the whole city. 3-5 bars I don't mind.
Other than that small number of things, it has nothing. If I can think of and list everything in one post, it gets a 3/10 rating from me as a 25-35 year old without kids
