we stayed in a 5* suite across from Pitti Plaza in Florence, with paintings from 14th century in the room for $150. Also stayed in a modern 5* hotel in Venice for $110. We went in off season, so it wasnt crowded, and really got lucky on the one in Florence.

Piazza Pitti Palace was the hotel in Florence and Hotel Orologio in Venice.

Im not saying you have to stay in hostels, but you can.
