As with all generalities, there are exceptions. In the early 2000s, there was an excellent Cajun restaurant in Asheville, NC. It was owned and operated by a couple from New Iberia. The locals didn't seem to appreciate it, so after a couple of years, it closed its doors, and the couple moved to Germany to open a Cajun restaurant.
I once ate at a very good Cajun restaurant in London (of all places, considering the overall lack of quality food there). It was great—the waiter said the owner was from Louisiana, but we didn't get to meet him. The food was good, but the prices were out of sight.

Just the boudin in the red area makes it the best. Dupuys, Riverfront. And Shucks in Abbeville out class all of NOLA by themselves.

This is such a simplistic view of the subject. I've lived and stayed up and down the coast from Destin to Corpus Christi. The best food, with true LA flair, can be found from Beaumont to Biloxi.
Lafayette is definitely great with very few folks who came into the area with intentions of capitalizing on the reputation for great food. Some still suck as not everyone can successfully produce at restaurant volume. To leave out LC is dumb, they have some good food too.
There are great options in BR and NO but also many imitators. A great many folks descended from these cities are scattered along the Northshore all the way to Biloxi so there are some gems out there.
I hail from N LA, nothing along I-20 compares to I-10 and 12 corridors.

As someone that didn't grow up in LA I agree. I have always seen Cajun food as comfort food and Creole as more refined, it is city food after all. I like most Cajun food but it is not MY comfort food. So when I am in LA I prefer Cajun food cooked by a maw maw or paw paw in their own kitchen and if I am paying to sit down and eat I prefer Creole because it elevates better IMO.

Pats of Henderson is terrible but seems to be popular among old people.

The problem for many regional cuisine restaurants is if they don't bend their menu to the locals taste at least a little they will often not last. A prime example is Indian cusine, if they don't offer a wide variety of dishes that don't cause sweating while eating they will limit their potential patrons. Less of an issue in a large city like NY, Chicago, L.A. or Houston where there are enough people to support fringe cuisine.

Pervasive myth, London can compete with almost every city in the world for haute cuisine. OTTOMH I can name at least a dozen exceptional London eateries and I am only there 2-3 times a year.
