Honestly you don’t build a team with team building exercises. You build a team by working together and building trust with each other everyday, involving members in discussions and decisions (whether their input matters or not), promoting a We mentality, etc.
If you are going to go the cliched team building outing route, the first step to team building is to let the team pick where and what together as a team. You need to be seen as a leader, not the decider of everything. Even if they pick something shitty and everyone has a shitty time, they made the choice together. They will be closer as a team than if you said on xyz day we are going to do xyz as a team building exercise.
If you truly want a team, be a leader. You manage job duties, you lead people.

Buy a couple of bicycles that you have to put together yourself. Assemble them as a team and then go donate them to a children's home or special needs school. It'll actually make you look like an absolute rockstar and the team will love giving it away and making some little special needs kid happy.
Bonus points for the photo-op and posting that shite to an intranet for your company. Trust me, corporate types eat this kind of shite up.

3. Cooking class LA culinary Institute
4. Axe throwing
The escape room stuff SUCKS with coworkers. It makes you want to murder some of them

Agreed escape rooms aren't that much fun

This is me.
We do an annual trip that's on weekdays, and it's pretty good since we go to not-boring places. Some of the time is spent doing work type stuff, but not games or hokey things like that. We all live in different states, so this is when we collaborate each year to work on bigger picture stuff. It's only like 1 full day of that, with us going out to lunch and ending around 3-4pm.
The rest of the time is doing stuff like visiting wineries, going to nice dinners, getting cocktails somewhere neat, hiking if you want to, etc. There's usually some free time for you to use as you wish. And nobody cares if you extend the trip and have a SO come meet up, assuming your flight home on the later date isn't absurdly expensive.
