The Amish in my area are super conservative and Old Order, so much so that they believe Amish who have roofs on their buggies are "worldly".

Most here write checks for the majority of their transactions.

They also usually keep guns/bows in their buggies so not sure if a thief would be very successful.

A local boy kicked me in the butt last week
I just smiled at him and I turned the other cheek
I really don't care, in fact I wish him well
'Cause I'll be laughing my head off when he's burning in Hell
But I ain't never punched a tourist even if he deserved it
An Amish with a 'tude?
You know that's unheard of

Do they use banks or is it all cash?

Probably, I haven't asked them about that. Each community has different rules about what technology they can use and for what reason. The community I'm familiar with is allowed to use tractors, skid steers, electricity, cell phones, vans, trucks, etc if it is for their business. They have to make the vehicles as uncomfortable as possible so you'll see a truck going down the road in 20 degree weather with no doors on it and a wooden bench seat instead of normal seats. They'll also ride their horse and buggy up to the field then get off and get on a skid steer to work.

The Amish use banks.

Keep in mind the Amish are not part of a monolithic society/culture. Your question is like asking if Christians drink alcohol or dance.

The Amish down here (Mennonites) ride Ebikes and talk on cell phones.

Out of all the people in the world to rob, he picked an Amish fella. They still use horses for transportation. How much was he expecting to get from them?

Have you ever been to a furniture store? The Amish make high quality furniture. The baw was probably hoping he just sold a bunch of furniture and was carrying a lot it cash on him. Plus it should be relatively easy to get away from, since many Amish don’t use any technology or even know what a cell phone is.

I once passed a buggy near Lancaster, and it was bumping rap music. I assume it was some rumspringa rebellion, but I don't know. As time goes on more and more of them adopt ways of the English.

Mennonites and Amish derive from the same religious tree, Anabaptists, but the Amish separated from the Mennonites in the late 1600's.

Here is an interesting site to check some of these things out.
