It was flying just above the bottom of the clouds. Which look to be about the same elevation now. It being so low is what initially got my attention.
ETA: I'm not saying it was 300ft but was abnormally low.

I saw it too and I live in Prairieville. I don't know what type of plane it was since I don't know shite about aircrafts but I am pretty sure it was not a civilian aircraft. I don't think it was as low as she described but I would feel comfortable saying it was less than 1000 feet high. It spooked me because of how low it was. It was not moving very fast and was quiet for how low it was.

What I saw was wedge shaped but I saw very little detail because it was a moonless 9-10 p.m.
It appeared to be pretty low but 3 things really grabbed my attention.
1. It was moving very slow. It should have fallen out of the sky at that speed.
2. Unlike OP wife's account this one was very loud. VERY loud like F-15 doing a straight up run or Harrier hovering.
3. The size. It covered a lot of sky. It was large. Since I couldn't tell how high it was I don't know how big but to be that loud and cover that much sky it would have had to be a stealth bomber nearly hovering speed LESS than 300 ft. over my house ... which we all know it wasn't
I also noted that op's wife said something about 2 barrel thingies. On most I'd say engine, bomb or spare fuel cells. The problem is stealth wedge shaped aircraft have none of these visible.

Bruh it was dark outside and that was a Skeeter Plane. I've seen them do low flyovers around Mandeville HS during jr high game and they can look kinda skeery.
