I'd rent, the quality of rental gear is so good anymore that I've stopped buying boots and skis, a lot less shite to lug around

Yeah I fell in love skiing my first time but my shins hurt so bad my eyes were watering.
It wasn't so much when I was skiing, but walking around in the boots.

This....you're right, it wasnt so much when I was skiing..it was I was trying to walk around in the boots.....couldnt even walk...
I literally said frick it one day and sat at the bar at the base of the Mountain all day drinking beer on pain pills to make the pain stop...laughing at people coming down the mountain busting arse and running over people...This was in Steamboat BTW

If you take a lesson and an inkling of athleticism, you’ll be skiing blues by the end of the 2nd day if not sooner. Pick a place with lots of blues and or greens and you’ll have a blast

For more of a challenge, pass on the skis and go for the snowboard. I love skiing and such and I am pretty good at it surprisingly. So I thought one day I was ready for something new and rented a board for the day. Holy shite I wasn't ready for that. It's just so different. I ate shite for about 5 hours straight before I could actually make a complete run down very small hills
. The next day I had a blast once I worked out the soreness from the day before.
Snowboarding is much more fun IMO, but its tougher to master. So I would only do that if you're doing a longer trip. If not you will hate it because it feels like just when you are getting good enough to have some fun, it's time to leave.

If you're thinking out West, get hooked up with a ski club relatively near you and do it fast. They'll have information, and they'll be finalizing their scheduled trips soon. If you do it on your own, as a first-timer you're going to get serious sticker-shock, and if you turn out to not like it, you'll be really pissed off at the money you spent on tickets.
Other people have mentioned altitude. Almost every place you'll be recommended in Utah or Colorado is at about 10,000 feet more or less -- that's serious altitude, and can cause problems. Steamboat Springs is about 6500 feet - that's much less likely to give you a bad surprise.
Skiing is fun. It can be intimidating to get started, but it's worth the effort (if you turn out to like it).
Don't expect to be shredding the mountain on your first trip. First day you'll find out whether you like it enough to continue, and not much more. Next couple of days, with at least one 2 hour group lesson, and you'll have some confidence about moving around on easy runs, evaluating which runs you can handle, and maybe understanding the movement patterns enough to learn more on your own.

Best technical advice you'll (or any other beginner) will get.
If you don't have a real boot-fitter help you with rentals, you should know that EVERYBODY rents boots that are TOO DAMN BIG, even when they know this rule.
