you can always put a fence up along your property line but make sure the entire fence is on your side. then get ready for him to shoot at your workers while they are standing on his side of the fence nailing up the boards

Who did you purchase land from? If they were never aware that the adjacent owner laid claim to the portion and title is clear then he has no case. Put the fence up, cut the trees - pecans suck anyway

Neighbor has no legal case, but who cares. He seems to be a crazy couillon who will likely retaliate and start a good old fashioned feud if you put up a fence or cut down those trees.
If he truly makes you fear for the well being of your family, you should think about a different property.

If ditch is valid...
ETA: I put the line down the middle of the ditch to line up up with the first 50' or so of direction.
If whole ditch is on CCA land, the entire tree base may be too.

It's easy to walk out there and say, "Yeah, that ditch is obviously the line... it's straight." Then lay the plat over the aerial imagery, and have a butt pucker moment.

SITUATION RESOLVED!!!!!
My buddy had left some tools out there from the other day when we were pulling property string. He just went out there to pick his stuff up.
While walking he noticed CCA approaching him on my land. CCA begin to tell him that He went to the court house and saw the actual paperwork and not his hand drawn plat map from the 70's and sees now that he doesn't actually own the trees. He nor his Dad never did. He told my buddy that he wants to apologize to me for acting the way he did. and he shouldn't have lost his temper.
