"Cabbage" is also an old slang for "money".
As an aside, my wife makes it all into a casserole (cabbage sautéed with onions, mixed with andouille sausage (pork & beef), RO-TEL tomatoes, rice, multiple cheeses and topped with cornbread) and it's fricking fantastic!

I cooked this overnight in the Crockpot:
Black-eyed peas, fresh collard greens, ham, and smoked sausage. Cornbread from scratch on the side. Photo taken after cooking the greens down a bit and adding to the other ingredients in the Crockpot.

Same except for the cabbage. We do collards instead.
My grandmother told me that peas were for luck and the collards were for money. I don't think she ever mentioned what pork and cornbread represented something else. I always assumed they were just complimentary to the peas and greens. (and you can't have hoppin john without some kind of pork.)
For the record, I don't recall ever telling any of my kids what they were supposed to represent.

In my family, ham is health, black eyed peas are luck, and cabbage is wealth. Cornbread is included just because corn bread is good. The preferred drink is iced tea.
Today, after kicking out the extended family a couple of days ago, we had left-over double smoked ham, left-over roasted brussels sprouts with bacon, normal black-eyed peas, and left-over homemade yeast rolls. I didn't see a point of making fresh cabbage or cornbread when we had left-over brussels sprouts (technically a small cabbage) and left-over home-made yeast rolls. We're home alone and with a lot of left-over beer that our guests left behind, so we had beer instead of tea.
If I die or go broke before 2026, I have no one but myself to blame.

Mrs. STLDawg isn’t from the south so I end up doing a fusion with her culture and cook some kielbasa and have sauerkraut with the black eyed peas and collards.

Reminds me of my friend whose father is from Germany. She has sauerkraut with just about everything.
