Take the thermostat out, see what happens… Summer is approaching, put one back in in the fall…

Thermostat looks like a cheap, 30 minute fix. Easily done yourself.

Had this happen on a Chevrolet Impala.
It was a bad instrument cluster. It wasn't really hot.
It was only the temp gauge that was bad, but the entire cluster had to be replaced. vehicle was still under warranty. It would have cost over $ 1,000 bucks.

Your ride doesn't have a fan clutch but rather an electric fan controlled by the ECM
Faulty coolant temp sensor or circuit combined with a dirty rad will cause the fans to behave incorrectly.
When you turn the heat on you're routing the coolant into the heater core increasing the cooling capicity of your system. This tells me that your radiator has never been cleaned (inside and outside) and isn't working at 100% performance. These three things are your best friend for radiator maintenance..

Most folks haven't replaced a rad on a 2015 as you have.
It's most likely the thermostat, a fan control circuit or relay but another thing that can cause overheating issues only at higher RPM's is a an aging and partially clogged cat converter which would be expected for a 2015 vehicle

Is it the 2.4 or 3.2? I was referring to the latter.

If it isn't any of the stuff mentioned, get a kit to check your coolant for exhaust gases. I've had a blown head gasket cause exactly what you've described as it was leaking combustion gases into the coolant passages in the block. Kind of the reverse of the more common problem of coolant getting into the cylinders and blowing white smoke.

I've had that in a 99 Oldsmobile but I don't think that's what is happening here, or at least I hope not.

Baw, I’m an insurance agent, not a mechanic. Ask me how insurance will handle an accident caused by your engine stalling while driving because it overheated and it results in a multi car accident with many injuries and I can give you a precise answer. I just spitballed on your question, however a quick ChatGPT session sort of confirms it could very well be a water pump issue.
