Can you install and see these without going through your alarm system company?

Yes.
Just order a security camera system. I got a Samsung 8 camera + DVR for about $250.
Probably cheaper now.

Depends on your needs. Battery of wired? DVR, cloud, sd card storage?

Yup... I put a 4k, 6 camera Lorex system on my house about 3 weekends ago. Took about 5 hours. If you don't mind crawling around in your attic and have a fish tape, it's no that hard.

My next door neighbor just installed 12 cameras outside his house. You can’t see them unless you stand right under them. They cover every inch of his front, back, and side yards. Also covers my basement door and driveway. His is wired to the recorder and the recorder holds 48 hours of video. He told me the name of his system and how much $$$, but I forgot.

That's an indication he went crazy cheap.

The real cheap ones from Harbor Freight hold 7 days of data, or so I'm told.

ETA: Looked it up, of course the setting one chooses of the resolution of the cameras will impact the amount of space (and therefore time) for allowable storage

I got mind set up in my backyard one to look at the wildlife and the other facing the OT 7's bathroom window next door

Yes, if you have Internet at your location.

ETA: by see, I took it to mean for you to view the cameras over your phone.

I can view my Samsung cameras on my phone with an , albeit a buggy one, app called "Wiseview"
