Couldn't you just kill the deal and put the house back up for sale? In this market you may be able to get a higher price than 5 months ago. That being said, you would probably now have to remedy the flooring problem they are bitching about but for a lot less than $23K.

Those were the buyers Chad, not the sellers.
You are making a lot of definitive claims without having seen the contract, seller disclosures, addendum, or the relevant Florida law.

Have they completed the renovations?
If so, and if they sue you, counter-sue them for breach of contract. Ask that the relief be that the deal is unwound, i.e. you give them their money back and you get the (newly renovated) house back.
Then sell the house and profit.
You may not succeed, but they will have significant risk in pursuing their suit.

Wrong. An inspector can’t or won’t be held liable for things unseen. Ex if there are boxes in the attic they aren’t moving the boxes to inspect what’s under or around the boxes.

You're doing this wrong. You need time. Tell them you'll consider it but you'll need to see the itemized Bill's for materials and labor equaling 23k.
They don't have this and it will take a while to produce it. Use that time to get a consult from an attorney.

They are going to have to prove that you knowingly knew about the damage. I was sued similar situation 20 plus years ago - the original case was for $65000 we settled for about $3500.

An unreasonable deadline screams scare tactic to me. I would tell them to pound sand.
I am not an attorney but have sued and been sued enough to know when something is bullshite. Even if they have resources to push this through court they don’t seem to have a strong case of what you said is true.

I would fight too which is why I struggle with the advice of offer a settlement. I also have access to a couple of lawyers in the family.
