It's easy to say this without offering a proper response. Something clearly hurt her and I wanted to know why/how so that I can avoid hurting her further. What should I have said? She didn't question my masculinity and I didn't wimp away; I apologized for hurting the person I love and expressed what bothered me about her response.

But you can’t even begin to think about your relationship in such a way because (and I assume probably correctly here) you’d worry so damn much about offending her that you’d never make light of her shite test. It sounds like she’s probably frustrated and dealing with someone in her life who is making her feel inferior as a woman, and you did something condescending, and the two merged and she had a breaking point.
Would you still be making this thread if she said “ you’re being a condescending dick and I’m tired of you talking to me that way”? Or did you just get triggered by her calling it mansplaining?

Yes run!!! PA student as well, I will be honest most female PAs are full of shite and always trying to “prove themselves” bunch of try hards. Once again I would run for the hills buddy. I love in the PNW too so good luck to you.
