Authentic meat-only chili made with fire roasted Passila-Ancho and Chipotle peppers and with cubed, smoked brisket and no fricking beans is one of life's culinary pleasures.

Creole gumbo is superior to Cajun gumbo.
What most people outside the area consider Cajun is really creole.

Eta cajun jambalaya is superior as well. Tomatoes are for red sauce.
