Same with gumbos. I don't eat gumbo at restaurants for this very reason. I prefer my gumbo and the gumbo my dad made - that's it.

Agree with some of the responses...couldn't put my finger on why they looked weird but i think it's the total lack of seasoning....

In their defense, they probably don't need as much seasoning since I doubt dishes have as much seasoning as down south.

most yankees steam seafood and throw dry seasonings on top so you season it as you touch the meat with your fingers

I mean the corn almost looks fake.
Corn from a crawfish boil should look like a 75 year old woman from Lafourche Parish.

I don't know if I've ever known disappointment as great as when I was lined up to get some crawfish one time at a boil and they pulled the corn out of a separate container and it was boiled completely separately from the crawfish.

They should be boiled in water that is absolutely filled with seasoning and other fixins. This shite was boiled in clear water. Bland.

those crawfish look translucent and sickly, not bright or bold red, to even a dark color red. could be bad photo editing, i guess?

I've had boiled crawfish in Finland. It is unseasoned and translucent. Very strange texture although the flavor is somewhat familiar.

It is a different species of crawfish. Those are white crawfish. They don't taste the same. Claws look different. That is why they aren't real red after boiling. Could be seasoned, but probably not.
If a wholesaler saw those in your sacks he wouldn't buy them or they would be sent straight to the processing plant and downgrade your price. New Orleans buyers would blackball you to anyone and everyone they know.
Ponds used to produce a lot of white crawfish, but could only be sold to the processors or direct to friends, people who didn't know better, etc. Many restocked with spillway after the season. After a few years, their ponds would turn. Several years back in the guise of helping the rice farmer the State killed a whole bunch of the seed crawfish in the ponds. They restocked with spillway, making their product more marketable. There are some white crawfish still, but not as much as before.
