Mexican has got to be one of the worst as a washer.

You left out the part that makes it so hard. You're getting jack shite for pay.

reminds me of the time I was in a Mexican place and noticed a big smear of guacamole on my plate as I finished up my meal that had no guacamole whatsoever involved in it

The reason places refuse to split tabs on big parties isn’t because they’re lazy - it’s to make sure they get paid. Here’s what inevitably happens:

- 25% of the reservation shows up early and demands to be seated.
- They order drinks and appetizers.
- The other 75% trickle in. They order drinks and appetizers. As people show up, they rearrange seating.
- Extra people show up that were not included in the reservation headcount (especially if the headcount is conveniently just below the number that requires a deposit).
- The seating rearranges again as these extras show up.
- People walk around and mingle while ordering drinks and food.
- By the time the food comes out, seating has been completely reshuffled 2-3 times.
- Small groups start wanting to leave while others are still drinking/eating/ordering dessert. They want their tab. But they “only had 2 appletinis, the third one must have been someone else.”
- Slowly, as folks leave, the remaining bill gets larger.
- The last group to leave refuses to pay for items that were actually ordered by people who have already paid.

If you have a group of 20+ who want to sit at one table with separate checks, it’s a recipe for disaster. Many places will split checks only up to a certain party size for this reason. Otherwise you basically need to treat it like bar service - open a tab on a credit card for each group.

That's the real problem...the two or three people that pull in real dough don't trust the other 50 people to pony up on their credit card.

Back in the day. My group all worked as either waiters or bartenders. We used to meet up and go out after our shifts, we would usually go a restaurant without calling ahead (no cell phones) usually one of us would go in and tell them the party size and ask if they could seat us. We would also let them know we were all bartender and waiters and that usually got us seated very quickly.
