That is so much bullshite.
I burn 7000-8000 calories on a solo century (no drafting) on relatively flat ground at 18-20mph, something like the Assualt on Mt. Mitchell I burn over 13,000.
There is literally no way a cyclist can do two "hard" centuries on back to back days with nothing but a handful of nuts as a recovery from the first day. Their glycogen would be so low the second morning they would have trouble rolling out of bed.
The average cyclist doing a century will consume 2500-3000 calories DURING the ride and 4000 or more in loading and recovery.

I cut 11 lbs doing keto, 211 down to 200 and hit a plateau. Got off keto and started carb cycling and cut 7 more lbs.

You have been candid as frick so I’ll will be. I’m 6’2 273 pounds. I will not be a 300 pounder I’ll choose self liquidation first. I know a lotta OT snobs will laugh at drawing a line from 270 to 300 a fat frick is a fat frick but I’ve gained a hundred pounds since 1996. Got out of the Corps at 6’2 170. Frick Keto but I’m impressed you’re motivated.

I guess I’d have to start doing that every day rather than occasionally cause it didn’t keep me from gaining weight in the first place

If I only drank a couple drinks I’d be fine with bourbon but for example Saturday night I drank 3/4 of a half gallon of vodka. I can do the same with bourbon

Wanna analyze my strava data? I had both a hr monitor and power meter going.
Congrats for completing the assault on mt Mitchell.
I also did the sunrise century in 3:51 which is one of my proudest accomplishments but of course we were running a 2 man pace line most of the way. Got really difficult around mile 75 when we were down to about 6 people.
And yes that's really how I ate. I was full atkins the whole time I raced and it didn't hurt me from being competitive.

Strava doesn't tell me anything about your caloric intake.
There is simply no way someone can ride 2 back to back centuries "hard" with just eating a handful of nuts post 1st ride. Christoph Strasser probably couldn't do it. I mean be serious that sort of caloric deficit is horrible for endurance events. I eat about 2000 calories above my BMR to cover just my evening 40k ride and that is just a 19-20mph roll.
I am of the mind a pure Adkins diet is a poor choice for cyclist (World Tour Pro's nutritionists agree). In a 40k TT I am looking at consuming 60-70g of Carbs during the race. Post ride meal is usually 40g of protein and 60-80 grams of carbs.
Nutrition is ever advancing but it has worked for me for over 35 years. I don't watch fat intake too much but the majority of my calories are in carbs.
Have only missed The Assualt 3 times since 1985. Having lived most of that time in the city it starts in I have ridden the route maybe 150 times and the climbing portion from Marion to the top something like 200 more times. I am not really much of an endurance cyclist or climber but I do it once in a while, I am mainly crits and TTs.

Potatoes are one of the best bang for your buck foods.

Really? A Friday night with coke involved usually leads to someone not being hungry on Saturday. So you have a built in day of fasting. If you eat relatively healthy generally speaking, a full day fast can do a lot to bump weight loss.
If you overeat in general, then yeah recreational partying ain't gonna cut it. Gotta pump those numbers up.

About 5 years back, I went from 240 to 185 in about 6 months doing a high protein - no carbs diet. I was walking a lot and that helped. Here is why I posted. I would plateau from time to time, and when I did I would for one day, eat only a can of vienna sausage. Then I would go right back into my typical 1 - 2 pounds drop every week. I think the fat in the Vienna Sausages is what would push me back into a loss pattern.
I had managed to hold my loss for a long time, but during this crap, gained much of it back. So, I am on keto now and the pounds are slowly coming back off. My motivation was my jeans got much too tight and 5 years back, I swore I would never buy a larger size jeans again.

It's not what they're saying at all. In fact, they are using potato logic. It comparing an apple to a door knob.
They compared a person in excellent shape can walk all day and burn the same amount of calories as a fat lard arse siting in a chair. That was the study to prove people burn the same amount of calories and thus exercise is irrelevant in obesity.
