Are you the devil to criticize gumbo? LOL If I had one meal before I died it would be seafood gumbo with a nice grilled steak on the side. If I only had one food to eat over my last year of my life, it would be gumbo; to paraphrase "Bubba' on "Forrest Gump" talking about different ways to cook shrimp, there are many different options on gumbo: chicken and sausage with a roux base or a roux and tomatoes; meat and sausage with a roux base or a roux and tomatoes; seafood gumbo with hundreds of combinations of ingredients with or without tomatoes; dozens of variations of turtle soup which is really gumbo based on exotic spices, lemon, and eggs added; faux turtle soup using meat or crawfish as an substitute; gumbo based upon various greens; etc. etc.
Gumbo is the food of Gods (or fake gods).
You evidently have not experienced enough gumbo. However, I forgive you if you would grill a medium rare ribeye steak for me and I would provide the potato salad, beer and / or bourbon.
