Is boudin poor people food?

I've tried it a few times and never cared for it.

To me, it seems like a LA version of tamales...which is a poor people food that has been 'culturally appropriated' by hispsters in food trucks and now everyone believes it's great.

Historically, probably. Most common foods are poor people food.

Lots of really great food was/is poor people food.

I'd rather lose a testacle than never eat any form of potatoes ever again.

EG, are you serious? Are white bread, turkey meat and cheese poor people food, too? Probably not, right? I am sure you simply eat caviar and drink Montrachet every day, right?

There is an awesome youtube documentary on it. It was developed as way to use the whole pig during hard times. After the depression they tended to use better ingredients.
