I don’t disagree with you but you have clearly never tried some of the baby food products out there then. Some are terrible sure, but not all of them.
There are plenty of fruits like strawberries that would be considered very sweet.
My 3 year old asked me why another girl about that age was drinking a beer. She’d never seen a Coca Cola in a can before. So I’m all about staying away from processed and other crap that we have available. I’m simply trying to say that not all of it is terrible.

We did lots of steamed carrots and made various fruit and steel cut oatmeal dishes. We stuck with baby food for proteins early on, but eventually the kids loved chicken (and they call ALL protein "chicken").

Try some chicken nuggets, PBJs, fruits, veggies. Mine personally liked grilled foods the most (i'd just cut off some from my meal). What I would not do is keep giving foods at a single sitting until he eats.
Put the food down and then put the foot down - if he eats then great. If not, sorry you're gonna be hungry. He's gotta figure out that when the food comes down you either eat it or you don't eat. You control what goes on the table, he controls what goes in the mouth.

I think just trying different vegetables one at a time is a good idea. Also, don't be afraid to season them a touch. Baked sweet potatoes with a dash of cumin are extremely tasty and healthy. That was another food my daughter took to right away.
It also helps if you eat the foods with them. Let them see that you're eating the same thing and enjoying it.

I typically tried to feed my kids what we ate and now both eat very well and don’t demand special food. My daughter doesn’t like things mixed together so I usually oblige that basic request. Start these habits early! Tragic how parents allow their kids to learn to eat. Literally abuse.

He is 11.5 months.
It is super annoying when people don't read the OP. Are you really trying to tell me to reason with my kid on learning to eat table food?

Oh I don't doubt there are some that are healthy and perfectly acceptable. I just wanted engage my daughter in eating the meal with us so she could see us eating the exact same things as her. It has worked out amazingly for us, but I'm not at all saying it's wrong to give kids healthy baby foods.
Now a diet of processed chicken nuggets and fruit drinks on the other hand...

This method is what we started with my son at 8 months (at the recommendation of our doctor) and he's done great.

My kid turned 9 months today. Tonight he ate baked fish (a small amount), refried beans w/ avocados mashed in it, cauliflower mashed potatoes, and puréed green beans. For dessert he had a mango protein pouch thingy from Costco. Only ate a 1/3 of the pouch. Last night he killed almost a whole pouch.
Last night he had tofu, refried beans, and something else. Can't remember.

My niece is just hit 1 year, and she loves bananas and avocados. Cut them up into little pieces. She could eat a whole banana in one sitting, just ripping off little bits of the banana for her to eat.

On a related note, teach your kid sign language. My kids learned all sorts of words and we started signing around eating. Supposedly great for them mentally and ultimately was a lot of fun for us. We could communicate with our children long before they could talk.
